Bacon pancakes: a quick, last-minute recipe for Pancake Day! šŸ„žšŸ„“

With Pancake Day just a few hours away, I thought I’d write-up one of my favourite sweet and savoury recipes for the big day. This recipe is quick, easy and hassle-free. No crazy ingredients required, just some good quality streaky bacon and a few pantry staples. This is much shorter than my typical recipe content – just thought I’d throw it up for anyone who needs a quick recipe for Pancake Day.

Fluffy golden pancakes. Crispy bacon. Maple syrup and salted butter. Need I say more? Let’s get into it.

Step 1: Bacon prep šŸ„“

First, an easy way to cook your bacon. Obviously, you could just throw your bacon into a cold pan and bring it up to medium-high heat. This classic method always works. Another way though, is to just throw it in to the oven whilst you prep the pancake batter and simply let the oven do the work. Feel free to use smoked or unsmoked. I prefer unsmoked.

  • Lay the streaky bacon flat on a sheet pan

  • Cover it with another sheet pan (this keeps it nice and flat).

  • Throw it into a pre-heated 200°C oven.

  • Bake for 20 mins, flipping halfway, until beautifully crisp.

Step 2: Pancake batter šŸ„ž

You’ll need:

Ā· 1 egg

Ā· 400ml whole milk

Ā· 1 tsp vanilla extract or 1 whole vanilla pod

Ā· 2.5 tbsp melted unsalted butter

Ā· 280g all-purpose flour

Ā· 65g caster sugar

Ā· Pinch of sea salt

Ā· Pinch of baking soda

Ā· 1 tbsp baking powder

Whisk together the egg, milk, vanilla, and melted butter. In a separate bowl, mix all your dry ingredients. Then combine all the wet + dry and gently whisk together (don’t overdo it here – some lumps are totally fine).

Step 3: Pancake time šŸ”„

  • Heat a non-stick pan over medium heat with a small knob of butter.

  • Use 1/3 cup of batter per pancake and pour this into the centre

  • Wait for small bubbles to form on the surface (~2-3 mins), then lay some crispy bacon on top.

  • Flip and cook for 1.5 mins on the other side until golden brown

  • Repeat the process, adding more butter before each pancake goes in

Step 4: Plating

  • Stack them high.

  • Add extra bacon on top.

  • Drop on a knob of room temp butter

  • Drizzle with all the maple syrup you can handle.

And that’s basically it. So tomorrow, don’t settle for plain Jane pancakes. Go big with these bacon pancakes that look and taste the part.
