This is an absolute powerhouse of a dish. Ultra smooth, silky hummus topped with spiced beef and toasted pine nuts, all served in a crispy, golden bread bowl. It’s rich, indulgent, and takes less than 20 minutes to pull together (once your prep is sorted).
Now before I get into the detail, a quick word on the hummus. I tested countless batches and recipes for this and one reigned supreme. This is a dish where technique matters, but ingredients matter more. Hummus has been over-complicated by endless online recipes, but it really comes down to using high quality produce. Great chickpeas, good tahini, fresh lemon juice and ice. That’s your base. Master that, and the rest is just assembly.
In this recipe, I hope to clear up any confusion so that you can make this at home quickly, easily and hassle-free. There are a few key variables that are rarely mentioned in most recipes. We will address them here.
A few things to know before you start:
High quality chickpeas: This is the most important step which i will address first. Premium chickpeas are essential. More on this later.
Remove the skins: A tedious but essential task. Leaving them in will ruin the silky texture.
Create an emulsion: I have found that emulsifying a few of the ingredients first ensures a creamier final texture. Trust the process.
Ice: Adding ice when emulsifying keeps the mixture cool, helps it whip into a creamy paste, and makes everything lighter and smoother.
Bread bowl is optional, but elite: It looks the part and tastes the part. Break it off and add some crunch to the bite.
