Sausage Rolls: a recipe

A real foodies snack.

In this week’s recipe, we’re taking on the mighty sausage roll. They’re the perfect snack for a picnic, a breakfast treat, or alongside a cold beer; and when made properly, they’re totally irresistible.

In my version, we keep things classic but elevated: buttery, flaky pastry, a well-seasoned and juicy sausage centre, and a sweet-savoury date and walnut ketchup for dipping. The finishing touch is a homemade “everything bagel” seasoning, sprinkled over the top just before baking.

These sausage rolls are perfect to make ahead of time and can be served warm or at room temperature. They’re excellent either way and you can make mini bite-sized versions from this recipe too!


A few things to know before you start:

Sausages: the most important ingredient is the pork. I’m going to go into some detail on what is best to use and why below.
Caramelised onion: these are time consuming but worth every second. They add incredible depth and subtle sweetness to the filling.
Puff pastry: all-butter puff pastry is the only option for that perfectly flaky crust.
Cool the meat: cooling the sausage meat has a lot of benefits. It improves flavour, sets shape and makes handling the pastry a lot easier.
Top creatively: Everything bagel seasoning adds a savoury, herby crunch, but sesame seeds alone also work beautifully.

Serves: Makes 4 large sausage rolls or 12-14+ mini ones
