Okay so “assassin’s spaghetti” doesn’t exactly scream romance or Valentine’s Day but hear me out. This dish is bold, rich, and packed with deep, comforting flavours. If you’re looking to impress someone (or just treat yourself) with a dish that’s delicious and pretty unique, this is it.

My love affair with Spaghetti all’Assassina started a couple of years ago when I spent a few weeks travelling around Puglia, where this dish was born. Of course, I love a regular tomato pasta or arrabbiata, but both are just pretty standard let’s be honest. Spaghetti all’Assassina on the other hand is in a league of it’s own. The whole idea here is to let the spaghetti burn slightly – yes, burn – so it crisps up, develops a char and creates an almost addictively intense tomato sauce. The result? A plate of pasta that’s rich, crunchy in spots, spicy, and totally unforgettable.

I saw a couple peeps making this not too long ago and it reminded me to give it a try. After a few trial runs (and a few burnt failures), I cracked the code – and now, I’m sharing it with you.
