With all of the amazing burgers from NYC in mind, I wanted to try and recreate a tavern-style burger at home that cohesively combined some of my favourite elements. Below is a little background to my thinking on these elements, followed by the full recipe and process. I’ll caveat this all by saying that this burger is still a work in progress. There are a few tweaks to make here and there (which I’ll specify) but one thing’s for sure, it’s damn good.
Let’s start with the beef. The most crucial element of it all. The cuts of beef are super important as you ultimately want a blend that has a well-rounded flavour and texture but also one that stays juicy after prolonged grilling.
